Anat Apter’s remarkable journey took her from selling falafel at Johannesburg’s Bruma Lake Flea Market to building a nationwide franchise with over 20 outlets. Her secret? Unique Middle Eastern fast food and an unwavering focus on quality.

Apter’s transformation from housewife to entrepreneur began when her husband warned of impending financial ruin. Drawing on her grandfather’s falafel-making expertise, learned in Egypt, she defied her childhood vow to never enter the food business.

In 1992, Apter approached Bruma Lake Flea Market’s management, boldly offering falafel to the crowds. Despite initial skepticism, she secured a spot and launched ANAT with a branded trailer, funded by maxing out her R10,000 credit card limit.

First-day sales of 50 falafel portions at R5 each sparked excitement and fueled Apter’s determination. Word-of-mouth and quality food propelled ANAT forward.

Franchising proved a game-changer in 1998, but Apter faced challenges without mentorship. Through trial and error, she refined her training methods, ensuring franchisees succeeded.

Today, ANAT boasts 22 outlets, a bakery supplying fresh pita breads and wraps, and partnerships with coffee shops, supermarkets, and restaurants.

The 2008 financial crisis tested Apter’s resilience, forcing store closures and rent payments. However, strategic adjustments and renewed focus enabled her to rise from the ashes.

Apter’s advice to aspiring entrepreneurs? “It’s not sipping champagne on the beach.” Passion and perseverance are essential for navigating day-to-day challenges.
